The Best and Easiest, Coconut, Oatmeal Raisin Cookie Recipe
I’ve been meaning to get around to writing this recipe for a while now, as it’s a family favorite! If you’re a fan of chewy, soft, cookies, this one is definitely for you! My take on this classic cookie is easy to make, (no fancy kitchen tools needed!) fast to prepare, and will leave your friends and family begging you to make more. I know from experience!
Ingredients ( makes about 24 cookies):
- 1/2 cup softened butter
- 1/2 cup brown sugar
- 2 tblsp granulated sugar
- 1 egg
- 1/2 tblsp vanilla extract
- 1/2 tblsp molasses
- 3/4 cups flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups old fashioned oats
- 1/2 cup raisins
- 1/2 cup unsweetened coconut flakes
Instructions:
- In a bowl, mix together your butter, and sugars.
- Add your egg , vanilla extract, and molasses. Mix.
- Then add your dry ingredients to the wet. The flour, baking soda, and salt. Mix this all together until smooth.
- Now add the oats, raisins , and coconut to your bowl, and mix until the ingredients are all evenly mixed.
- Place your bowl into the fridge for 30 – 45 minutes to cool
- Preheat your oven to 350 degrees farenheit
- Prepare your baking sheet , I like to by spreading it with butter.
- With a spoon , or ice cream scoop, gather your cookie dough. Roll them into small balls , and place on your sheet.
- Bake your cookies for 12-14 minutes , then allow to cool.
- Yummy!
