Simple and Delicious Blueberry Muffins
I’m so excited to be sharing this recipe! This week I made these muffins for a family member, and they claimed they were the best blueberry muffins they had ever had! ( And they’ve had a lot! ) Not only are they super delicious, but this recipe is extremely simple! Something you could whip up easily on a whim!
Ingredients:
Makes 6 muffins
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 stick (1/4 cup) unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 3/4 teaspoon vanilla extract
- 1/4 cup milk
- 1 heaping cup of blueberries
Instructions:
- Preheat oven to 375°F
- Prepare muffin tray with liners and set aside
- In a medium bowl, mix together your baking powder , sugar, and salt
- Then add your egg, butter, either softened or melted before hand, vanilla extract, and milk. Whisk those in.
- Add your flour and mix together until you have a nice thick batter.
- Finally , pour , and mix in your blueberries until distributed evenly throughout.
- Scoop your batter into the preprepared muffin tin.
- Bake your muffins for about 25-30 minutes , or until a nice golden brown, then allow to cool before removing from tin.
