Simple and Sour, The Best Homemade Lemon Pie
We are finally into late spring, and summer is just around the corner! One of my favorite flavors for this time of year is lemon! I don’t know about you, but something about lemons is so delicious and refreshing in the summer! I love tasting the sour flavor! Other than some nice cold lemonade, I make lemon pies this time of year! If you want to try a new take on a lemon pie, where you get a little more pizazz from the sour, and less sugar, this is the recipe for you!
First, you will need to make the pie crust!

Ingredients:
- 3 egg yolks
- 1 cup sugar
- 6 tbsp butter
- 1/3 cup lemon juice
- 1 tbsp honey
- 2/3 cup water
- 2 tbsp cornstarch
Instructions:
- Bake your pie crust in the oven at 350 for 15-20 minutes
- Grab a bowl, and over the bowl crack the eggs. Pour the yolk back and forth between the shells and let the whites pour out into the bowl. Then put the yolks into a pot
- Add sugar, butter, lemon juice, and honey to the pot. Then start heating it up on medium heat, stirring as you go.
- In a separate bowl, mix the water and cornstarch together with a fork until it’s all dissolved
- Wait until your mixture on the stove starts to bubble, and then slowly add the water mixture to it while stirring. As you stir you should start to see it thicken up.
- Take your pot off the heat.
- Pour your filling into the baked pie crust.
- Allow to cool off in the fridge before serving!
