Autumn is the season of soups and stews, and I have been busy in the kitchen making all kinds of different recipes to try! This past week I uploaded a video to my youtube channel 3 Delicious Soup Recipes! ( Perfect for Fall!) and realized that I have only shared one soup recipe on the blog so far! My Beef Stew Recipe ! This, I decided, had to change! Here’s a favorite of mine for this time of year, my butternut soup! It’s filled with delicious and nutritional ingredients and is so simple to make! Follow along to make it for yourself!

Ingredients:

  • 1 butternut squash
  • 1 medium onion
  • 1-2 apples depending on size ( I used 2 macintoshes)
  • 1 carrot
  • 4 cups broth of choice ( I recommend vegetable or chicken)
  • 1/2 tsp cinnamon
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 4 tbsp brown sugar
  • 1/2 cup milk
  • 1/4 cup heavy cream

Instructions:

( You can make this recipe on the stovetop just fine, but I find this one is easier in a slow cooker, so that’s what I used )

  • First, chop up all your fruits and vegetables into diced cubes
  • Put all these ingredients into a slow cooker
  • Add your broth, spices, and sugar to the cooker as well.
  • Leave this cook on high for about 3 hours
  • After time has passed, check to make sure everything is nice and soft
  • Use an immersion blender ( If you don’t have one you can pour it into a regular blender, just be careful not to burn yourself!) to puree all your ingredients until smooth completely
  • Once your soup is all blended, add your milk and cream
  • Your soup is now done and ready to serve! This soup pairs perfectly with homemade bread! (Homemade Bread Recipe)
